Salmon is an excellent source of Omega-3 fatty acids. Recent studies show the connection between omega-3 and cardiovascular disease demonstrated that the intake of these fatty acids is linked to better cardiovascular health. Salmon has also been linked to benefitting the brain and cognitive process. So it makes sense to incorporate it into your diet.
I try to eat salmon at least once a week, and normally roast fillets in the oven with spices. Of course, eating salmon so frequently, I look for a variety of ways to cook it. I came up with these Salmon cakes – think crab cakes but with salmon. They are light, filling, and delicious.
Serves 2
Ingredients:
- 2-3 Salmon fillets
- 2 green onions, chopped
- 1/2 cup almond flour
- 1/4 cup unsweetened plain greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon dijon mustard
- 1 egg
- 1 tablespoon olive oil
- Salt & pepper to taste
Directions:
Place all ingredients into a food processor and blend. If you do not have a food processor, you can use a blender or chop salmon into tiny pieces and stir in a bowl.
Form 4-6 patties. Heat a saute pan with olive oil over medium heat. Place patties into the pan and cook on both sides, about 5-6 minutes each. Remove from heat and serve.
I like to serve this dish with a side of sauteed spinach, or other green vegetables like asparagus or zucchini.
