The sweet potato has so many nutrients.  They’re high in fiber and antioxidants, which protect your body from free radical damage and promote a healthy gut and brain. They’re also incredibly rich in beta-carotene, which is converted to vitamin A to support good vision and your immune system.  You can prepare them in many ways.  I like to roast a few at a time to meal prep, and then use them for lunch or dinner.

It’s fun to make loaded sweet potatoes.  You can literally add anything you want to them, but if you want to keep it healthy, add a few vegetables and a small amount of cheese for a hearty lunch or a side for dinner.

Roasted sweet potatoes

Ingredients:

  • 1 – 3 sweet potatoes
  • 1 – 2 tablespoons olive oil

Directions:

Preheat oven to 400 degrees.

Take a fork and poke several holes into the sweet potatoes.  Drizzle olive oil on the sweet potatoes and individually wrap up each one in aluminum foil.  Place on the baking sheet and cook one hour or until the sweet potatoes are softened.

For loaded sweet potatoes, I add roasted broccoli, chopped green onions and shredded cheese.  Additional ideas for toppings include roasted peppers, black beans, salsa and avocados for a southwest flare.
