My love for banana bread pushed me into this alternative and healthier baked oatmeal.  This is great to eat for breakfast, lunch, or as a dessert.  The recipe uses more natural sweeteners, and by adding the oatmeal, you are getting more fiber which will help you feel fuller longer.  It can be eaten alone, or with yogurt, peanut butter or more fruits like strawberries and blueberries.

Ingredients:

  • 3 ripe bananas, mashed
  • 1/3 cup coconut sugar
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups nut milk
  • 2 1/2 cups old-fashioned rolled oats
  • 1/2 cup chopped walnuts

Directions:

Preheat the oven to 375 degrees.  Mash the bananas with a fork in a bowl.  Once mashed, add coconut sugar, eggs, salt, vanilla, baking powder, cinnamon, and nutmeg.  Whisk until the ingredients are combined.  Add the milk and stir again.  Finally, stir in the oats and chopped walnuts.

Pour the oat mixture into a 9×9-inch dish and transfer to the preheated oven.  Bake for 40 minutes, or until it is golden brown on top and around the edges.

Serve warm or refrigerate and enjoy cold.  Option to warm some peanut butter and drizzle on top.
