It’s good to have variety when cooking fish, so coating whitefish with some almond flour and herbs, spices up your next meal while still being healthy. This recipe is simple to make and will please any fish lover!
Ingredients:
- 2 Whitefish fillets (I prefer wild-caught cod)
- 1 cup almond flour
- 1/2 tablespoon paprika
- 1 teaspoon parsley
- 1 teaspoon basil
- 1 teaspoon oregano
- 2 tablespoons grated parmesan
- 1 egg
- 1 tablespoon olive oil
- Salt
- Pepper
Directions:
Pat down whitefish with a paper towel or napkin so they are dry to the touch. Sprinkle with salt and pepper.
In a bowl, combine almond flour, paprika, parsley, basil, oregano, and parmesan. In a separate bowl, add the egg. First, take the whitefish and dip it into the egg, then transfer the fish into an almond flour mixture and make sure the fish is coated on both sides. Repeat the process with the second whitefish fillet.
Heat a medium-size saute pan over medium-high heat, add olive oil, and place both fillets into the pan. Cook on both sides for 5 minutes each. Transfer to a plate and serve with your favorite vegetables.
