I’ve been searching for gluten-free cookies that taste good. I’ll be honest, many that I’ve tried just lacked the sweetness and texture of a real cookie. Just because something is healthy, doesn’t mean it should lack flavor. I think this one is great! It’s gluten-free and dairy-free, as well as kid-approved! (my kids loved them).
Ingredients:
- 1 cup almond butter (I use crunchy, but creamy is good too, for those with peanut allergies)
- 2/3 cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 cup dark chocolate chip
Instructions:
- Line two baking sheets with parchment paper
- Add the almond butter, coconut sugar, egg, vanilla extract, and baking soda into a bowl or food processor and mix together until very well combined. Stir in the chocolate chips
- Scoop 1 tbls of batter onto cookie sheets and bake 350°F for 9-11 minutes or until the cookies are set
